[…] With a whole slew of Peruvian restaurants popping up across Spain, it seems that the leader in modern gastronomy has come down with Peruvian fever.  Virgilio Martínez and Gastón Acurio both presented at January’s edition of Madrid Fusión and, last month in Madrid, Quilombo tapas bar hosted an entire month dedicated to featured Peruvian-inspired tapas.  Could bacalao and paella slowly get replaced with lechón and ceviche?  Don’t plan on it.  However, if you’re in Barcelona at the end of March, you might want to take advantage of the ‘Ruta Gastronómica de Tapas Peruanas y Pisco Sour’ that will be taking place in Barcelona.
